Grainy and sweet, this traditional dense, moist, caramelized cake is served in small squares, garnished with pistachios, almonds, and just a hint of saffron.
This traditional Indian milk fudge is an all-time hit. Milk and sugar are cooked and then split with alum, cooled, set and cut into cubes. The slight caramelization gives it a light brown colour and slightly fudgy texture. Our milk cake is exceptionally good because we have made huge investments in trying to learn how Indian desserts have been consumed over the past century. Our research has allowed us to make the perfect milk cake from the optimum level of caramelization to the right amount of sweetness.
